- 1 packet Grilled Bacon Cheeseburger Mix
- 1 lb ground beef
- 6 slices bacon (optional)
- 1 small onion, chopped
- 2 lbs small red potatoes sliced or quartered
- 2 Tablespoons butter, softened
- 1 cup sour cream (8 oz.)
- 2 cups shredded cheddar cheese, reserve 1/2 cup of cheese for garnish
1. Heat oven to 400°F. Spray 8-inch square (2-quart) glass casserole dish with cooking spray. In 10-inch skillet, cook beef and onion over medium-high heat, stirring frequently, until brown; drain.
2. Spoon beef mixture into casserole dish, add remaining ingredients setting aside 1/2 cups of shredded cheese and mix well. Bake for 30 minutes.
3. Sprinkle 1/2 cup cheese over top and bake for 10 minutes or until browned. Allow to set for 5 minutes before serving.
